BAKED GARLIC PARMESAN CHICKEN

Like many equestrians, Will Enzinger leads a busy life balancing his commitments as a rider, coach, and Eventing Pathways Manager for the High Performance team — as well as cooking for the family!

Will shares with us his favourite dish, Baked Garlic Parmesan Chicken, which he proclaims to be a “quick tasty meal that is easy to make and tastes great every time!”

The below recipe serves six. Enjoy!

INGREDIENTS

  • 2 tablespoons of olive oil
  • 1 clove of raw garlic
  • 1 cup of dry bread crumbs
  • ⅔ cup of grated parmesan cheese
  • 1 teaspoon of ground basil
  • ¼ teaspoon of black pepper
  • 6 pieces of chicken breast (bone and skin removed)

METHOD

Step 1

Preheat the oven to 175 degrees Celsius. Lightly grease a large baking dish.

Step 2

In a bowl, blend the olive oil and garlic. In a separate bowl, mix the bread crumbs, Parmesan cheese, basil, and pepper. Dip each chicken breast in the oil mixture, then in the bread crumb mixture. Arrange the coated chicken breasts in the prepared baking dish, and top with any remaining bread crumb mixture.

Step 3

Bake for 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.
